How to Make Blueberry Banana Bread

A step-by-step guide to making banana blueberry bread with a hint of honey. This recipe is a great way to transform overly ripe bananas and blueberries into a delicious, moist and flavorful bread.


Makes 1 loaf (approximately 8 servings) or 3 small loaves


Ingredients



  • 2 cups all-purpose flour

  • ½ teaspoon salt

  • 1 teaspoon baking soda

  • 1 cup sugar

  • 1 stick (½ cup) butter or margarine, softened

  • 1 teaspoon vanilla

  • 2 eggs

  • 1 generous tablespoon honey

  • 2 large ripe bananas, mashed

  • 1 cup fresh blueberries


Steps



  1. Preheat the oven to 350°F (175℃).





  2. Grease 1 large loaf pan.





  3. Mix flour, baking soda, and salt together in a bowl.





    • This will be referred to as the dry mixture.



  4. Use an electric mixer to beat butter and sugar together in a large bowl, until light and fluffy.





    • The mixture should be noticeably lighter in color.



  5. Add 1 egg and blend the mixture, then add the second egg along with the vanilla extract, and honey. Beat this new mixture.





    • It is hard to have too much vanilla. It just adds (delicious) flavor.



  6. Beat mashed bananas thoroughly into the mixture.





  7. Add the dry mixture in small increments while beating slowly until the mixture combines into a thick batter.





  8. Fold blueberries into the batter.





  9. Pour batter into loaf pan.





  10. Bake in oven for 45-55 minutes.





    • To check readiness, insert toothpick (or knife) into the center of the bread. If it comes out clean, it is ready!



  11. Cool in the pan for 10 minutes before enjoying your delectable creation!






Tips



  • Don't be afraid to be liberal with the honey and the vanilla. They just add flavor to the already delicious bread!

  • Keep the eggs in their container, lest they roll off the counter and fall on the floor.

  • Start cleaning up while the bread is in the oven.

  • Taste the batter. If the batter is good, the bread will be good!
