Makes 1 loaf (approximately 8 servings) or 3 small loaves
Ingredients
- 2 cups all-purpose flour
- ½ teaspoon salt
- 1 teaspoon baking soda
- 1 cup sugar
- 1 stick (½ cup) butter or margarine, softened
- 1 teaspoon vanilla
- 2 eggs
- 1 generous tablespoon honey
- 2 large ripe bananas, mashed
- 1 cup fresh blueberries
Steps
- Preheat the oven to 350°F (175℃).
- Grease 1 large loaf pan.
- Mix flour, baking soda, and salt together in a bowl.
- This will be referred to as the dry mixture.
- Use an electric mixer to beat butter and sugar together in a large bowl, until light and fluffy.
- The mixture should be noticeably lighter in color.
- Add 1 egg and blend the mixture, then add the second egg along with the vanilla extract, and honey. Beat this new mixture.
- It is hard to have too much vanilla. It just adds (delicious) flavor.
- Beat mashed bananas thoroughly into the mixture.
- Add the dry mixture in small increments while beating slowly until the mixture combines into a thick batter.
- Fold blueberries into the batter.
- Pour batter into loaf pan.
- Bake in oven for 45-55 minutes.
- To check readiness, insert toothpick (or knife) into the center of the bread. If it comes out clean, it is ready!
- Cool in the pan for 10 minutes before enjoying your delectable creation!
Tips
- Don't be afraid to be liberal with the honey and the vanilla. They just add flavor to the already delicious bread!
- Keep the eggs in their container, lest they roll off the counter and fall on the floor.
- Start cleaning up while the bread is in the oven.
